Shui Xian is the old backbone of Wuyi rock tea, a big-leaf cultivar that gives width instead of height. Orchid and dry wood over a broth with real weight to it, then a mineral finish that keeps going after the aroma has gone. The gentlest of the three, and the place to start if roast is new to you.
