Ma Tou Yan Rou Gui, 马肉 in the trade, the way Niu Lan Keng Rou Gui is 牛肉, is among the most sought-after teas in Wuyishan, and one of the few yancha that Chinese collectors will name by cliff rather than by cultivar. It is not an entry tea and it doesn't pretend to be.

Origin:

Ma Tou Yan (马头岩), Wuyishan, Fujian. Core cliff zone, 正岩. Named for a rock formation shaped like a horse's head, the area sits open to the sun in a way the deep ravine gardens don't, and that sunlight is the whole signature: Ma Tou Yan Rou Gui runs hotter, sharper and more aggressive than Rou Gui grown in shade. Wuyi people describe it as 霸气 domineering. The soil is broken volcanic gravel, and the mineral it carries into the cup is what 岩韵 actually means.

Rou Gui, and this roast:

Rou Gui is the fragrant pillar of Wuyi 香不过肉桂, the cultivar bred and selected for aromatic force. Cinnamon bark is the classic note, and the character is sharp where Shui Xian is mellow.

一道火 means one roasting pass rather than the two or three a heavier finish takes. That's a deliberate choice, not a shortcut: a single light roast keeps the floral and fruit top notes that deeper fire burns away, so the cliff character and the cultivar aroma both come through unmasked. It's how you taste the garden rather than the roaster.


Taste:

Bright amber-orange, clear and oily. Cinnamon bark and hot spice up front, genuinely sharp, almost peppery, over ripe peach and osmanthus, with only a light char underneath. Then the mineral: cool, stony, sitting at the back of the throat and staying there. Full-bodied, powerful, with a long 喉韵 that keeps returning between sips. Assertive from the first cup.

Brewing:

Gongfu, always — 8g per 110ml gaiwan, full rolling boil.

Quick rinse to wake the leaf, then flash / 6s / 10s / 15s, extending. 8–10 infusions.

Boiling water, no exceptions. Cool water flattens yancha completely.

With a single roast the aroma arrives immediately, and the mineral finish builds from the second or third cup rather than hiding behind char.

Not suitable for Grandpa brewing.
