Ya Shi Xiang · Duck Shit Aroma — Phoenix Oolong, Chaozhou · 50g · Spring 2025

Fenghuang Shan (凤凰山), Chaozhou, Guangdong. High-elevation granite slopes, sea fog off the coast, and the Shui Xian-family cultivars that Chaozhou has been selecting for aroma for eight hundred years.

What makes it:

Dan Cong is famous for one thing: it tastes like flowers and fruit without anything being added. Chaozhou makers spent centuries selecting individual bushes for aroma and then propagating them, the result is a set of named aroma types (香型), each a distinct lineage. Honey Orchid (蜜兰香), Gardenia (黄枝香), Almond (杏仁香), and the unfortunately-named Duck Shit (鸭屎香), which is a great tea with a terrible story behind the name.

Processing is long and difficult: withering, repeated shaking to bruise the leaf edges, oxidation, kill-green, rolling, then charcoal roasting. The aroma is built in the shaking, and it's easy to lose.

Taste:

Bright golden-orange, clean and bracing. Intense floral top notes over ripe stone fruit and honey, with a light roast underneath and a dry mineral snap on the finish. Long, cooling aftertaste. Aggressive in a way white tea never is — this is a tea that announces itself in the first cup.

Brewing: 

The important part,

Gongfu, high ratio, fast — 7g per 110ml gaiwan, full rolling boil.

Flash infusions. Rinse, then pour in and pour straight out — 3s, 5s, 8s, extending slowly. Dan Cong turns bitter faster than any other oolong. Four seconds too long is the difference between orchid and astringency.

10+ infusions if you keep the early ones short.

Chaozhou is where gongfu brewing was invented — small pot, small cups, fast hands. Brewing it any other way loses the point.

Not recommended Grandpa style. Long steeping in a mug produces bitterness and nothing else.
